I run 29-30 F/R on the argument that such a light bike needs lower pressures so that the tires will come up to temperature. It's worked well for me. '13 Duke 690, '19 Ninja 400 (track bike), '21 Duke 890R, '22 Street Triple RS, '22 S1000XR , '22 R7 (track) (gone but not forgotten '17 SD GT, '61 BSA Clubman's Gold Star) S.
After some research I've narrowed my decision to either the Triumph Street Triple or the KTM Duke 690. I know the Triumph is probably more common of the two but the KTM looks fairly comparable and cheaper. Both bikes have received positive reviews in the articles I've read.

The 690 Duke seat is the lowest of the possible stock seats that fit the Duke, and also the 690SM. The 690SM is the taller of the two, by over an inch. In other words, if you had a 690SM and wanted a cheap lower alternative, you'd buy a 690 Duke seat. If you had a 690 Duke and wanted a cheap taller seat, you'd fit a 690SM seat. It should be alright with the restriction. Make sure you use a throttle stopper so you still get the full power output. Being a duke, I expect the torque to be low-mid ranger so you should pretty much have a full power 690 with just some mph knocked off top speed. Perfect restriction bikes are twins though imo.
